Title: Fiesta Meatloaf

Yield: 6 Servings
| 1/2 | c | Chopped onion |
| 1/2 | c | Chopped celery |
| 1/4 | c | Chopped green pepper |
| 2 | tb | Butter |
| 12 | oz | Heinz chili sauce |
| 1 1/2 | lb | Ground beef, lean |
| 1 | c | Soft bread crumbs |
| 1 | | Egg, slightly beaten |
| 1/2 | ts | Salt |
| 1/4 | ts | Pepper |
Saute onion, pepper, and celery, in butter, until tender. Stir in chili
sauce. Combine 1/2 cup sauce mixture with all other ingredients. Form into
a loaf in a shallow baking pan. Bake at 350 deg f for 1 hour. Let stand
for five minutes before slicing. serve remaining sauce over meatloaf. makes
4 to 6 servings.
